It’s Thursday. As the temperature continues to drop and the leaves begin to fall, it must be that time of the year again—time for homemade pumpkin seeds! I gutted ‘ole Jack the other night and roasted up his seeds to a golden brown. This is my first batch of the season and they turned out fantastic! I like ’em really salty so I hit them generously with salt while they’re still wet from being rinsed. That way the salt sticks really well. Perfect for snacking while working throughout the day!

It’s Friday! Well, with tricks or treats just one day away, I thought I’d feature a few photos of a Halloween display in Orlando, Florida, that’s so convincingly gruesome that it’s got people calling 911. If you ask me, that’s just proof you’re doing Halloween right.
I’ve heard that many towns and cities have cancelled Halloween Trick-or-Treating due to the rise in Covid-19 infections. Here in my neighborhood the kids can rejoice because it’s still on. I’m okay with the decision because I think with a few mindful steps, the kids can still Trick-or-Treat safely. I doubt there will be as many as in the previous years, but I plan to be at the ready handing out the candy wearing a face mask.
